MSPrebiotic® (FODMAP Friendly) Chocolate Horchata

A variation on the traditional cool, creamy Mexican drink that is FODMAP friendly and good for your gut health too! 


  • 1 cup Long Grain Rice
  • 2 tsp Cinnamon, Ground
  • 2 tsp Vanilla Extract
  • 2 cups Water
  • 2 Tbsp Sugar
  • 1 Tbsp Cacao Powder
  • 2 cups Almond Milk, Unsweetened
  • 1 Tbsp Cacao Powder
  • 4 tsp MSPrebiotic®

Takes prep + 3 hrs chill time - serves 4 servings (1 cup per serving).


  1. In a blender, add long grain rice, sugar, water, cinnamon, vanilla, and cocoa powder. Blend for 1-2 minutes until rice is well crushed but not smooth, pour into a bowl.
  2. Cover bowl and keep in fridge overnight or at least 3 hours.
  3. Strain mixture through a fine mesh strainer or cheesecloth into a pot. Heat on medium low to a simmer for approximately 5 minutes.
  4. During the heating process, keep whisking to ensure a smooth texture. You will notice it slightly thicken as you heat and stir the mixture.
  5. Once thickened pour into a pitcher or bowl and chill in the refrigerator overnight or until cold.
  6. Once cold, add almond milk and 2 cups of ice. Mix and stir in MSPrebiotic. Garnish with a light dusting of cocoa.
